Authentic Irish Soda Bread:
This hearty quick bread is so tasty, you'd never guess the recipe
was born of necessity: yeast won't leaven the soft wheat grown in
Ireland. Serve it warm or toasted with tea.
Ingredients:2
cups white flour
2 cups whole wheat flour
1/2 cup sugar
2 tsp. baking soda
1 tsp. salt
4 tbsp. butter, chilled
1 cup raisins
1 1/2 cups buttermilk or plain yogurt
Directions:
-Heat the oven to 350 degrees.
In a bowl, combine the dry ingredients.
-Cut in the butter until it is pea-sized. Stir in the raisins and
buttermilk or yogurt.
-Turn the dough onto a floured surface, knead 1 minute, and shape
into a disk.
-Cut an "X" in the top and bake on a greased baking sheet for 45 to
50 minutes. Makes one 8-inch-wide loaf.
BANANA NUT BREAD:
A yummy treat for Christmas
giving or anytime year round!
Ingredients:

ripe bananas, mashed
1 egg, well beaten
1 stick butter, melted and cooled
1 ½ C flour
1 C sugar
1t salt
1t baking soda
½ C chopped nuts
Directions:
In large mixing bowl, mix together bananas, egg, and butter. Sift
together the flour, sugar, salt, and soda and stir into banana
mixture until well blended. Add nuts.
Pour batter into loaf pan (9x5inch) and bake at 350 for 55-60
minutes or until pick inserted in center comes out clean.

Mother's Day Blueberry Muffins:
Serve for Mother's Day breakfast or brunch,
include fresh blueberries, if possible.

Ingredients:
1/2 c Butter
1 c Sugar
2 Eggs
2 c Flour
2 ts Baking powder
1/2 ts Salt
1/2 c Milk
1 ts Vanilla
2 c Blueberries, divided
Sugar mixed with cinnamon, for topping
Directions:
Cream together butter and sugar. Add eggs, one at a time; mix until
blended. Sift together the flour, baking powder, and salt; add
alternately with milk and vanilla. Mash 1/2 cup blueberries; stir
into batter. Add remaining whole berries. Grease muffin tins. Pile
batter high. Sprinkle with sugar/cinnamon topping. Bake at 375
degrees F. for 30 to 35 minutes. Makes 12 muffins.
